I grill fresh corn (still in husks) on my grill often. I don't pull off the husks, nor do I wrap in foil. I don't want it steamed, which is what you get if you wrap it in foil. In the husks, the corn will be really rustic and kinda primitive; I like it that way. It will grill in about 12 - 15 minutes. When the husks are parched, it's ready. When I'm ready to eat, I just add salt and butter. But Olive oil will do fine.Can you sub olive oil for butter when grilling corn on the cob?
Yes you can.
You can even leave the husks on and use nothing. The silk comes off easily when its cooked, and the husk acts like it own private oven and keeps the moisture in.
Flavor it with whatever you like when it is done. Olive oil and spices sounds great.
I don't see any reason why you couldn't. I mean people put olive oil on baked potatoes and wrap them in foil when grilling them so I see no reason why you could do it with corn.
You can most definitely use olive oil.
Olive oil, some herbs, garlic and salt and pepper..sounds like a good idea to me.

Use some margarine if she likes that.
