When roasting tomatos and other veg in olive oil do they lose their goodness?

I make a lot of soups/pasta sauces by roasting tomatos, chilli, garlic etc and just wondered if NOT drowned in olive oil if they still have goodness.When roasting tomatos and other veg in olive oil do they lose their goodness?
Any amount of cooking to veggies will make them lose some of their nutritional value... With that being said... a light sprinkling of olive oil is a good way to add some flavor to cooked veggies! Just don't DROWN them in the oil. Although olive oil is a healthy addition to your daily diet, it IS oil, and carries a lot of calories with it.


A better option would be to use olive oil spray. You can find it with the ';Pam'; out there - in the same isle as the oil. That way, you can get the taste and benefits of the oil, yet control how much actually get absorbed into your food.

Olive oil is a Plus not a Detriment in nutrition (Extra Virgin) especially .The cooking heat is what destroys amino acids and vitamins.I prefer less ';drowned'; dishes unless its ';Roasted Peppers'; or the like.
any thing you cook from vegs would loss some of its goodness, but you can steam them or eat them fresh...
As for nutritional loss, any form of cooking heat kills or minimizes the Vitamin C value. You can make the best sauces by sauteing garlic, onion, and chilies for a short time


on medium heat in just enough oil to prevent sticking, then adding tomatoes and other ingredients. Cover and simmer for 2-3 hours, stirring occasionally. Don't add any salt until it finished.
