Can I use olive oil in peanut sauce?

I want to make peanut sauce and my recipe calls for corn oil. can I use vegetable or olive oil instead. what is the difference?Can I use olive oil in peanut sauce?
it should be okay to use anyone.. there isnt a big difference between the two(Difference between corn and olive oil. Both are highly unsaturated fats, have the same number of calories, and contain no cholesterol. The main difference in ';healthfulness'; between corn and olive oil is their levels of monounsaturated fats. Olive oil has a higher percentage of monounsaturated fats (as opposed to polyunsaturated), which some research suggests is very effective in lowering blood cholesterol levels. The exact ratios are as follows:





* CORN: 59% polyunsaturated 24% monounsaturated 13% saturated 6.4:1 unsaturated/saturated fat ratio


* OLIVE: 9% polyunsaturated 72% monounsaturated 14% saturated 5.8:1 unsaturated/saturated fat ratio

Basically, as long as you're using all fats and oils sparingly in your food and cooking, it would be fine to consume both olive and corn oil in moderation. The issues become price and preference. If you are however, predisposed or at high risk for cardiovascular disease, it couldn't hurt to use more or all olive oil in your foods (and could potentially be a benefit).)Can I use olive oil in peanut sauce?
I'd say use Veg oil, as it's very flavour neutral (Corn oil has a light flavour of corn, unlike veg oil which is almost flavourless) and is a good choice to use when you need a light tasting oil and don't have other varieties on hand.





You certainly can use olive oil. I'd suggest using just ';olive oil';, not virgin or extra virgin, as those have a stronger identifiable flavour than a blended or last press olive oil.





The only real differences (other than nutrition, like the poster above stated) are the smoke point (the temperature it can reach before it smokes or burns) and the flavour.
Vegetable oil would work just fine. I would try not to use the olive oil as it contains its own flavor profile which could clash with other flavors.
