I want to make a light, lemony salad dressing that isn't sour.

2/3 C. olive oil


1/3 C. lemon juice


2 tsp. sugar


1 tsp. salt


1/4 tsp. pepper





In a jar with a tight fitting lid combine all of the ingredients


Shake well. Refrigerate. Chill to blend flavors

LEMON VINAIGRETTE


Makes 5 cups





3 cups Whole-egg mayonnaise


2 cups Lemonade concentrate


2 1/2 Tbsp. Dijon mustard


Sugar to taste





Combine ingredients and whisk until smooth. Season to taste with sugar.

Lemon Vinaigrette:


1/4 cup fresh lemon juice


1/4 cup lightly packed fresh Italian parsley leaves


2 cloves garlic


2 teaspoons finely grated lemon zest


1/2 teaspoon salt


1/4 teaspoon freshly ground black pepper


1/3 cup extra-virgin olive oil





Blend the lemon juice, parsley, garlic, lemon zest, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper.
Are you using lemon juice? Is that why it's sour? Try using lemon zest and only a touch of juice. There is a lot of flavor in the zest.





Or you can take the rind off the lemon, and infuse the flavor into your olive oil by heating it (just like making garlic oil), and then using that in place of regular EVOO. I would use mild oil, it's much smoother flavor works quite well with lemon, and doesn't over power the lemon flavor - or any other flavor for that matter.
Combine:


1/2 c. olive oil


1/4 c. apple cider vinegar


salt, pepper, lemon zest (grating the rind of a lemon)


sample and set aside.








In A Saucepan:


Boil 1 c. water with 2 Tbl sugar.


Adjust salad dressing 1 tsp at a time until you get the


smoothness.

Mix ingredients and brush on meat 1 minute before removing from grill.



Try this one... juice of 1/2 lemon (1 Tbsp.), 1/2 Tbsp. red wine vinegar, 1 tsp. honey, pinch of onion %26amp; / or garlic powder, salt, pepper...whisk in 2 to 3 Tbsp. good olive oil to blend. Greek style dressing.
I just toss my salad in a little olive oil and squeeze the lemon on top and toss again, I sometimes add a little vinegar, salt and pepper, even some garlic powder is a nice suttle change now and then.
Have you heard of sweet and sour? if you feel your salad dressing is too sour. Just add a little sugar water to it that will sweeten it up just enough for your liking. (sugar water is sugar in water)
