What can I add to olive oil to make a nice dipping sauce for ciabbata bread?

i would try good old garlic.... or add a small amount of avocado and some finely chopped basil, beat together then leave for about an hour to infuse.....but for future cooking/dipping get a good quality bottle of olive oil %26amp; add fresh thin sliced garlic (i normally add at least two cloves) then put the bottle back into the cupboard for at least two weeks, the tastes will fuse together %26amp; this is great for cooking or dipping as i said before. What can I add to olive oil to make a nice dipping sauce for ciabbata bread?
You could add lime juice, honey, chilli and coriander to make an asian flavour. What can I add to olive oil to make a nice dipping sauce for ciabbata bread?
balsamic vinegar!

and put a small bowl of salt on the side too.
balsamic vinegar, or lemon juice, herbs and garlic, pepper and a little salt. Try some finely chopped chilli and garlic.......
one italian restaurant I went to poured out the olive oil onto a saucer and then crushed black pepper over the oil and it was really good with their ciabbata bread..

rosemary is a wonderful spice that would give it a nice flavor....or basil....

maybe a dash of garlic powder in your oil...
balsamic vinegar, crushed garlic, and chilli flakes.
Rosemary, thyme. there are canisters with bread dipping spices combined at the grocery store that are great.
