You don't heat the oil.
Just put some finely grated parmesan, and macerated fresh herbs like basil and oregano, press some garlic and grind some pepper in it. Dip away!
You can also make flavored oil by just putting the herbs and pressed garlic and pepper into a bottle of oil and letting them steep in there.
Serve olive oil at room temp.
Mix in sea salt (or regular salt), garlic powder and some dried herbs. yum!

Oliver oil and Balsamic vinegar goes very well. I like to dipping my bread in Oliver oil and pepper. Oliver oil does have different smell when is heat up, but that how olive smell. If you infuse the oil with garlic and onion it should taste very good.
When you make oil for dipping all you do is add oregano and rosemary and if you want it hot some pepper flakes.... I also add salt and pepper ... when heating olive oil it should not smell any different than regular oil in a small amount but frying in deep oil it may have a strange smell... its best to fry with peanut oil... also do not buy flavored oils unless you cook on a daily basis because oils do go rancid
