What's the difference between virgin olive oil and extra virgin olive oil?

thanks!! also, does it really matter which one I use? What's the difference between virgin olive oil and extra virgin olive oil?
As blues breaker said, extra virgin is the very first oil from the whole olive as it is pressed with the seed intact. If you taste extra virgin and virgin and olive oil side by side, you can taste the difference.

Extra virgin is used salads or any type of uncooked oil applied to food. Virgin can be used for cooking oil but be careful cause it burns easily. What's the difference between virgin olive oil and extra virgin olive oil?
some feel they taste a bit different but i don't taste it. the other difference is in which press it is. i think ex virgin is the first press
