I know that virgin olive oil is the first pressing of the olives?

and all the subsequesnt pressings are of a lesser quality oil. What is extra virgin olive oil then?I know that virgin olive oil is the first pressing of the olives?
Extra virgin olive oil is oil produced from the first pressing, and better quality olives are used, it also sits longer in the barrel, a bit like a good wine, as it needs to settle. Cheaper oils are made from different olives and are pressed many times to extract as much oil as possible, they are often sold immediately and haven't had time to mature.I know that virgin olive oil is the first pressing of the olives?
Best olive oil is made by the first cold pressing of best olives hand picked from the branches.





Hand picked olives are not bruised and the cold pressing traditionally only squeezes the less acid oil.





If that is the oil you got you can classify it as ';Extra Virgin';.
Sorry,you are wrong evoo is the first pressing,we have it straight from a factory where i live,its great dipped in fresh hot baguettes,you must try it,forget the butter.
Extra virgin olive oil is from the first pressing....virgin olive oil is the second.
